Spiced Pineapple Shrub
Shrubs are drinks made from a tangy fruit syrup with a vinegar base. This Spiced Pineapple Shrub adds a glorious flavour to cocktails, or can be combined with soda or sparkling water for a refreshing drink on a hot day. Made with DYC apple cider vinegar, its a great way to enjoy some apple cider vinegar.
1 Dole Tropical Gold Pineapple, peeled and cored
White sugar (the same weight as the pineapple)
250 - 450ml DYC apple cider vinegar
1 cinnamon stick
3 cloves
5cm piece ginger, finely grated

Chop the pineapple into small pieces, weigh it, and place in a large bowl with the spices.

Sprinkle over the same weight in white sugar.

Toss the pineapple and sugar together, cover the bowl, and leave to macerate for 2-3 days at room temperature. Stir it a couple of times while macerating.

Once the pineapple has finished macerating, strain the pineapple through a fine-mesh sieve, catching the syrup in a clean bowl. Save the pineapple for another recipe or add it to your breakfast muesli!

Add about 250ml of cider vinegar to the syrup and give it a good stir. Taste and keep adding vinegar until the syrup has a good balance of sweet and sour.

Pour the shrub into clean, sterilised bottles and refrigerate for up to a month.
