Easy Tomato Chutney

This easy tomato chutney is perfect to use up homegrown tomatoes and is a delight to enjoy later in the year. This recipe makes 2 jars (approx 200ml jam jars).

500g tomatoes
250g red onion
2 cloves garlic
1 fresh red chili
60 ml DYC Apple Cider vinegar
150g brown sugar

Chop the onions, tomatoes, and garlic.
Combine all ingredients in a pot. Simmer on a low heat for 30 - 40 minutes stirring often. The chutney is ready when it is a jam-like consistency.
Spoon the chutney into sterilized jars and set aside to cool.
Store the chutney in a cool dark place for up to 6 months unopened. Once opened, store in the fridge.
