Summer Pasta Salad

This recipe makes a great side for your BBQ.  

For the salad
250g Diamond Spiral Pasta, cooked al dente
½ cup cherry tomatoes
½ cup black olives
½ cup cucumber diced
¼ cup feta cheese
¼ cup red onion sliced

For the dressing
60 ml (1/4 cup) TATUA sour cream
30 ml (2 Tbsp) DYC white wine vinegar
40 ml (2 Tbsp & 2 tsp) extra virgin olive oil
10 ml (2 tsp) Dijon mustard
1 clove of garlic crushed
Salt and pepper

Dressing: To make the dressing, place the sour cream in a small bowl and whisk to remove any lumps. Add the remainder of the ingredients and stir to combine. Taste and adjust the seasoning.

Cook pasta according to directions.

Combine warm pasta and all the ingredients in a bowl & toss together. Dress and serve.
