Strawberry vinegar

This recipe is a great way to use the strawberry heads instead of wasting them. Great to use in salad dressings, or try over icecream!

Ingredients:
1.5 cups strawberry heads
1 cup DYC white vinegar
2 tsp sugar

Wash your strawberries and place them in a clean jar.

In a small saucepan, heat the vinegar just to the boiling point over medium heat.

Pour the hot vinegar over the strawberries. Add the sugar and stir to dissolve.

Let it come to room temperature before placing the lid on the jar.

Store in a cool, dark place (like a pantry or basement) for 2 to 4 days depending on how strong you want the strawberry flavour to be.

Strain and transfer the vinegar into a glass bottle.

Store in the fridge for up to 3 months.
