Pomegranate and apple cider vinaigrette

This pomegranate and apple cider vinaigrette makes a great dressing that you can keep for 3-4 weeks. The vinegar in the recipe preserves the vinaigrette and this can be stored in the pantry. This recipe is great to gift for Christmas.

1 cup pomegranate juice
3 tablespoons DYC apple cider vinegar
2 teaspoons Dijon mustard
2 tablespoons olive oil
½ teaspoon salt
½ teaspoon pepper

In a small bowl, combine the pomegranate juice, apple cider vinegar and mustard. Whisk to combine.

While whisking continuously, drizzle the extra virgin olive oil into the bowl. You should end up with a well emulsified dressing. Season to your taste with salt and pepper.

Keeps for 3-4 weeks in the pantry.
