Green salsa

This easy green salsa is the perfect accompaniment for so many dishes. Dip into bread or serve with fish, steak, roast chicken, or roast pork. Also works well with roasted carrots, roasted capsicum, roasted eggplant, cauliflower steaks.

¼ cup Superb Herb flat leaf parsley
1 tbsp Superb Herb mint
½ cup Superb Herb coriander
1 clove garlic, crushed
25g anchovies, chopped
1 tbsp capers, chopped
2 tsp Dijon mustard
2 tbsp D.Y.C white wine vinegar
7 tbsp olive oil

Chop the parsley, mint and coriander, set aside.
Add crushed garlic and chopped anchovies and capers.
Mix all ingredients in a bowl and season to taste.
