Greek Couscous Salad

This salad is sure to be a hit at your BBQ!

1 box Diamond Moroccan Couscous
3 large tomatoes, chopped
2 Lebanese cucumbers, chopped
1 red capsicum, chopped
1 small red onion, finely chopped
50g feta cheese, crumbled
¼ cup black olives

Greek Salad Dressing
5 tbsp extra virgin olive oil
3 tbsp DYC white wine vinegar
1 small clove of garlic, crushed
½ tsp dried oregano
½ tsp salt
Freshly ground black pepper, to taste

For the salad: Cook the couscous as per packet instructions and allow to cool.

For the dressing: Combine all the ingredients in a jar and shake well until emulsified.

To assemble the salad: Tip the cooled couscous into a large bowl and fluff with a fork to break up any lumps. Add the remaining salad ingredients, pour the dressing over, and mix gently until just combined.

Serve immediately, or refrigerate.
